I tried something new on the smoker yesterday and had great results. Bought a jumbo Costco whole fryer and split it down the middle. Put the halves in a large ziplock with some orange juice, cilantro and a couple splashes of tequila. (I let it marinate for about 6 hours) I dried the halves with paper towel and sprinkled with some rub and put on the hooks. Put the heat on the smoker up to between 300 and 325 degrees. In 90 minutes, the meat was at the appropriate 170 degree temp so I pulled them off, wrapped in foil and allowed to rest for about 30 minutes. The results on the dinner table were fabulous. VERY moist, juicy and flavorful.

Did you have smoke going all the time and what flavor wood?

Looks great, my mouth is watering......


I wanted just a light smoke so that the flavor of the chicken would come through. I only ran one pan of chips. The wood was apple, oak and just a little hickory.
