Got a question. Went to the Gorge this week-end and did quit well. My question is when I filleted the kokes some of the fillet's were a darker orange than others. Anybody know why?

Same thing noticed here in Ct.
They get their orange color from the freshwater shrimp they eat.
More shrimp they eat the darker the meat.

I noticed from our recent trip that the size was what seemed to make them different colored. The smaller ones were lighther orange and larger were darker orange.

Your right!
But as an analogy think about it this way.

Veal is light in color and as it grows into Beef the meat gets darker!

Same animal -> just growing and changing as it feeds.
