Kokanee Taste?

I am heading to the gorge this weekend and someone asked me if the taste of the kokanee will be different from the fish we caught in July...I didnt have an answer since I am realitivly new to koke fishing. I have heard that the kokes have started changing color so made me wonder. any info would be awesome or opinions... Also I have never launched out of Anvil draw and that is my plan right now I am launching a 23ft trophy is the ramp there in good shape is it cement or just gravel? Any info on the launch would be appreciated too

The launch at Anvil is cement and in pretty good shape. I can't say that about the dirt road to get there, extremely dry and dusty with a wash board surface to boot. With all that Anvil is still my favorite launch at the gorge.
 
Tastes just a little more fishy. Scales are being absorbed and the blood is changing to help in the spawn run. If this is a problem then you should bleed your late kokanee when you catch them and the problem is solved. Thing thing that I get frustrated with the late Kokanee is that the meat is very soft. Fillets come out all messed up. I just need more practice so I need to get out more.
