Grilled Bacon Wrapped Jalepenos

Here's a recipe that is great for BBQs.

14-16 Fresh Jalepenos
2 Sticks Philly Cream Cheese
2 Cups Shredded Medium Sharp Cheddar
1 Tbs Minced Garlic
1 lb Hickory Smoked Bacon
Toothpicks
Jalepeno Rack

-Core the jalepenos, rinse and set aside to breathe.
-Mix cream cheese, cheddar and garlic in medium size bowl until smooth.
-Cut bacon stips to 1/2 length
-Fill jalepenos smooth to top with cheese spread, wrap with bacon, secure bacon with toothpick and stand upright in rack

Grill, or cook in oven at 325 for 40-45 minutes.

Tips - For less heat with the jalepeno flavor cut the tip off the bottom so some of the juices drain while cooking. Also a small splash guard of foil may be needed to reduce flare-up. Pairs well with tortilla chips, ranch, mango salsa, and pale ale.

I nuke the bacon for just a bit so that it crisps up nice in the grille. Also try mixing some browned sausage or chorizo with you cream cheese filling.
 
I have been doing these for years but now use Serrano peppers and feta instead of Cheddar cheese but I will need to try the cheddar and garlic. Thanks!
