I was on another forum, AR15.com, when I noticed a thread asking people to list the best tasting freshwater fish. For obvious reasons, kokanee fishing generally isn't catch and release. While reading, I couldn't help but feel sorry for those poor southerners and Midwesterners. They consistently listed mushy catfish and wormy bluegills as their favorites101thumbsdown101. If only they knew what they were missing out here in the west. We really are blessed to have kokanee in our lakes and rivers.
 
I am a "poor Southerner" and have caught and eaten plenty of home grown Kokanee down here in NC. I do not think Kokanee are the best tasting fresh water fish. I would take a walleye, yellow perch, resident brook or rainbow trout(not hatchery) or black crappie caught in our clear deep mountain lakes for table fare before kokanee salmon.
 
Ahhh this is a GREAT thread. I was wondering where the mighty Walleye would land on this list....that's a fishery that is still on my bucket list as there isn't much opportunity in Western Washington. I also put Kokanee right up there with native trout. I'm curious....what about Burbot? Anyone with any input on that species?

The only good burbot,is a dead burbot. I have tasted them,tastes like lobster to me. They are called the poor man's lobster. I don't care much for sea food( lobster,crab,etc).
 
Burbot look like a ling cod and I like ling cod. When I get to spend more time at the Gorge, they will be on my target list to at least try.
 
You Tube has some great videos on how to clean a burbot....looks like quite a lot of quality meat! I would be so hooked if I lived in a productive area.....
 
I would have to say fresh Spring Salmon has to be the best fish I have eaten and I have eaten everything out there (I grew up in the South), a close second is not freshwater, but is the Halibut.....
 
My top two choices are Walleye and Perch (I also enjoy Kok's but not as much) And as for Burbot, well, I like Lobster, but I must not have fixed Burbot the right way yet....
 
Perch, Walleye, Crappie. Best tasting to me.

Trout are ok if cooked properly.

I have tried Burbot a couple different times. Honestly who ever said it tastes like lobster has never had fresh Maine lobster. I don't care for it.
