SuperD, please explain the charcoal in the gas grill. Thinking I'm missing something here.

They are ceramic briquettes. In my opinion, they serve 2 purposes on gas grills. One, they smoke off the drippings and add flavor to otherwise flavorless gas cooking. Two, heat distribution on small grills is spotty at best. The briquettes help even out the heat so that stuff doesn't burn as easily. They layers of things you see are all just methods to control the heat to cook what I desire. I bake biscuits on this just like your home oven. You've probably seen the pictures of fresh made cinnamon rolls I've cooked on this grill. The sky is the limit or should I say your imagination.
